Bo Bech, the Michelin-starred chef behind the kitchen at Restaurant Paustian in Copenhagen, is widely regarded as one of the most creative of the new generation of chefs, following in the footsteps of Heston and Ferran. ‘The Alchemist’, as he's fondly known, showed it’s not just about culinary wizardry – it’s also about the very best basics. To prove it he's opened a store in the heart of Copenhagen selling just one type of bread. A brave move in lean times, but the bread is the best bread you’ll ever eat and Bech has lived up to his nickname, turning the simple staple into a precious produce and a winning concept to boot.

She has been part of the brand since the magazine’s launch in 1996, and is responsible for entertaining content across the print and digital platforms, and for Wallpaper’s creative agency Bespoke.
