Hinoki & the Bird — Los Angeles, USA

The latest creation of restaurateur David Myers (of West Hollywood's French brasserie Comme CÌa) is located in The Century, a 42-storey upscale tower designed by architect Robert A M Stern. Interiors by LA-based MAI Studio feature reclaimed wood, glass and steel walls, a communal table and copper details. Inspired by Japanese fare and the Silk Road, the menu includes grilled drunken duck breast and hinoki-scented black cod served with a piece of the namesake hinoki cypress wood.
